The gyuto is a traditional Japanese design that is very similar to the classic western chef style blade found in most every kitchen.

The “S-grind” is a compound grind with hollows ground into the “cheeks” for superior food release and a thin convex grind tapering down to the sharpened edge for effortless cutting. This allows the user to make faster and more precise cuts without the hassle of removing stuck food from the blade.
